A great side dish--try it!

Vidalia, Georgia is the home of the sweetest, most delicious onions on Earth--well, at least in the Southeast United States. These delicacies taste fantastic any way you use them--but this is a recipe my mother used to make back when I was a kid and the Vidalia onions were in season. Here's the recipe I made last weekend for the first time in many years. I won't be waiting that long to serve it again!

 

 

VIDALIA ONION CASSEROLE

 

2 Vidalia Onions, medium to large

 

4 Tablespoons butter, divided

2 Tablespoons flour

1 cup milk

3/4 cup shredded sharp cheddar cheese

1 1/2 cups soft bread crumbs

 

Peel and thinly slice onions into saucepan. Cover with water, bring to a boil, and boil until soft, about 8-10 minutes.

 

Melt the butter, and mix half of it with the bread crumbs.

 

 

Add the flour to the remaining butter and stir until the flour is absorbed. Add the cold milk, and stir constantly over low heat until the sauce thickens. Add about 2/3 of the cheese, and mix the onions into the sauce.

 

Pour into a buttered casserole dish, cover with bread crumbs, and sprinkle with remaining cheese. Bake at 350 degrees for 25-30 minutes until crumbs are brown and cheese on top is melted.

 

Serves four as a side dish.
